This menu introduces Sonny - 'The right hand tentacles of the Octopus'. His cooking is a complex, subtle blend of European & Thai with Chinese overtones.
Sonny Kupkitabhund came from Thailand to live in London in 1986. He has worked at the Market Bar in Portobello Road, L'Escargot, & up until last year was head chef at the 'Paradise by way of Kensal Green'.
This menu would be suitable for a dinner party of 8 or more people.
Canapes Duck prosciutto & plum skewers Crispy won-ton ravioli with 'crab & gruyere' (a popular combo in Thailand these days he tells me) Double cooked pork belly with sweet & sour chilli sauce Marinated and fried tofu stuffed with butternut, squash & ginger puree (v) Miso marinated salmon skewer with pickled cucumber Miso marinated courgette & red pepper skewer with pickled cucumber (v) Chicken liver toast with green chilli, mint, lemongrass & thai basil Minced chicken, shallot, mint, roasted-rice-powder 'lahb' served on china spoon Prawn cakes and yellow pepper sauce
